Chocolatier’s Tip

Make this recipe dairy-free and vegan-friendly by using dairy-free or vegan cream, milk and ice cream alternatives - you may need to add a little extra milk as dairy-free ice cream can be more solid when frozen. If making this recipe for someone following a gluten free diet, always check the manufacturer's label to ensure your ingredients are free from gluten

Ingredients

125 ml double cream (see Tip)

60 g Lindt EXCELLENCE 70% Dark Chocolate, finely chopped

40 g butter, diced

For the milkshakes:

60 ml full-fat milk (see Tip)

6-8 scoops good-quality vanilla ice cream (see Tip)

¾ of the homemade chocolate sauce (see above)

Instruction

For the chocolate sauce: pour the cream into a saucepan and set over a low-medium heat. Slowly heat through - you want it to be hot to the touch, but not quite simmering.

Remove from the heat and pour into a heat-proof bowl. Add the chopped chocolate and whisk until melted and smooth.

Whisk in the diced butter and leave to cool before chilling in the fridge for 10 minutes to firm up a little - if making in advance, cover and chill in the fridge before microwaving for 10 seconds to loosen up.

For the milkshakes: add the milk, ice cream and ¾ of the chocolate sauce into a blender. Blitz for 1 minute - or until you have a medium-thick shake.

Set out 2 tall dessert glasses. Tilt the glasses at an angle and drizzle 1 tsp of the remaining chocolate sauce around the rim of each one.

Divide the chocolate shake between the glasses before topping with a swirl of whipped cream, if wished, and a fresh cherry. Grate over 1 square of EXCELLENCE 70% Dark Chocolate and drizzle with extra chocolate sauce. For extra indulgence, top each glass with a square of EXCELLENCE before serving straight away.
