Hey as a way of engaging myself to finish the projects I made my projects be very explicit and immature content along with personal information. I did this with the intention of fixing them after I finished. It appears I submitted such content for my certification. I’m unsure how I would go about replacing the information displayed. Would redo each project by deleting my account?

You can resubmit the certification projects as many times as you want.
For the time being, you can set your profile to private. That way your content is not visible to the public. Once you have resubmitted all the projects you can change the setting to public.
