The step requests is asking:

Call your function passing text and custom_key as the arguments. Store the return value of the function call in a variable called encryption.

To call a function in Python means to write only the name of the function (without the keyword def). When you call a function it is possible that it returns something, which it is asking to save in another variable named encryption.
Here the format

returned_value = called_function(first_argument, second_argument)
