Hi all! I finished the front end section and I have a bunch of projects from The Odin Project sitting in my GitHub account as well. I was wondering for those who are looking for a job, how did you organize everything so that employers could get a good picture of you? Post your suggestions. If you want post your GitHub profiles, Heroku apps, Codepen portfolios, anything you would want an employer to see.

I would move your portfolio out of CodePen and use Github pages to host it.
Your portfolio site is a great way to organize projects. You can send the site to potential employers, so keep it up to date, and make sure it showcases the skills you want to highlight.
