I finished: Role Playing Game, Calorie Counter, Music Player, Date Formatter, Todo App to 100%.
Now it is showing: 96%, 93%, 93%, 82%, 89%, and the steps that are not done.
I have tried clearing cash, data, and different web browsers.
What happened?

Probably there are new steps that you never went through. There are changes often in a beta project.
You can ignore them, or go through the new steps to see what changed, up to you
I have the same issue too , so incase I ignore will I be able to get the certification at the end of the course? given it’s required to complete all the challenges to obtain a certification
Only the 5 certification projects are required to get the certificate.
