Read the Academic Honesty Policy and noticed the plagiarism check so would love to know if recreating the examples given for the projects are valid, ofcourse written from scratch. Or have to create a completely different page?

The example projects are just examples and are not meant to be copied regardless if you do it by scratch or copy/paste and modify the original code.
In other words, you can take inspiration from the example to create your own original project.
