Is it a good thing to redesign or improve an existing website from a company to add on my portfolio?
- For example, improving the layout of a CRM system or adding useful function to a page of a CRM system.
- Improving a website of a lunchroom or a shop (responsiveness, design)
I would like to hear your opinion 
Anything you can do that shows the range of your skills is going to benefit you. You also need to stand out, I am sure jobs get tons of applications for Jr developer roles where they use projects like a todo list, a calculator, ect. Look at a business near you, and try t re create that website and functionality, find a small business whose website you can update. What are you passionate about? Use that and try to create a project or website that fills in a feature or area that you think is needed, but isnt there yet. Or, create a brand new project where the project handles something people might not think is needed. You just want potential companies to see that you can back up what you put on your resume

Thank you for sharing your thoughts 
Going back to older projects and making them better is an excellent exercise. Outside of fields like freelancing, portfolios aren’t common for programmers. I wouldn’t recommend building one just to showcase old projects. If you build applications that you continue to build, maintain, and promote then a personal website is a good idea.
